Another great braai side, also from the archives
SAVOURY RICE
Ingredients
  • 1½ cups long-grain parboiled rice
  • 2 tbsp oil
  • 1 medium onion (diced)
  • 1½ tbsp spice for rice
  • ¾ tsp salt
  • 3¼ cups water
  • 1 medium carrot (diced)
  • ½ green pepper (diced)
  • ½ red pepper (diced)
Instructions
  • Heat a tbsp of oil and fry the diced carrots, onion and peppers for about 6 mins, OR you can fry the onions only and saute the peppers and carrots on the side when the rice is almost done
  • Add the rice spice and salt and mix well and let cook for about 5 mins to give the rice a little toast and develop flavours
  • Pour the water/stock, close and cook until all the liquid is absorbed
  • Before fluffing the rice add the sauteed veggies, fluffy mixing in the peppers and carrots and serve
